INSTANT KIMCHI (GOCHUJANG)

Liking kimchi is not different in drinking or eating yogurt. There will be no worries even eating a right amount of it everyday. You'll be surprised by the health benefits of this Korean fermented SUPERFOOD ----- KIMCHI !!!  




I tried making a homemade kimchi paste before but I was curious if how a real authentic Korean kimchi tastes like if I use this Korean Hot Red Pepper Paste called "Gochujang" - the main ingredient used for the sauce in making kimchi and a product of Korea.


Other Ingredients: Use a food processor to grind White Onions, Garlic and Ginger. Sliced Carrot and Daikon (radish).

1 tbsp Red Chili Flakes and 2 tbsp Gochujang

1 kg Pechay Baguio (Napa Cabbage)


Wash pechay baguio thoroughly. Slice into bite-size. Put the cabbage in a strainer then soak with salt for about 2 hours while turning it gently every 30 minutes. Wash again 3-5 times to lessen saltiness. Dry and put in a non-reactive bowl. Set aside.





Mixed Altogether except cabbage then gently toss the sauce into the cabbage. Mix well. Put in a clean, airtight container.




For making a Homemade hot pepper paste:
  • Heat 2 cups of water + 1 cup glutinous flour (if not available you can use cornstarch or all-purpose flour) + 2 tbsp brown or white sugar.
  • Add  1/2 cup bagoong or patis (fish sauce)
  • Let it cool.
  • Add red hot chili powder according to taste and the refined white onion, garlic and ginger.
