2 large ginger
1/2 cup white vinegar
2 tbs sugar
Peel, wash then slice ginger as thin as you can like an oblong shape. Put in a basin. Mix salt by folding it with your hand. Soak for one hour. Meanwhile, heat vinegar and sugar while stirring, wait until sugar is dissolved. After past an hour, use dry cloth to remove excess juice from the ginger.
Get a clean jar put them in then add the vinegar mixture. Wait 5-7 days to ferment. The vinegar will change first into pink then ginger eventually. Consume up to 2 weeks.
