A HOME COOKED KOREAN FOOD LAST MOTHERS DAY


Why not make one of those food seen on Korean drama which I love. haven't tried it in my whole life haha! It's a good thing that some products used in these recipes are already available in our province. It was a fulfillment planning this for "Mothers Day Celebration". Besides the gift that Mom & I received (thanks for my hubby and my kids), this luncheon made our day so special...






KOREAN CUCUMBER MOJITO

CHICKEN JJAJANGMYEON (BLACK BEAN NOODLE)
with
HOMEMADE BLACK BEAN SAUCE

Ingredients:
500g pasta linguine, boiled al dente
1/2 kg chicken breast, sliced
carrot, julienne
cabbage, chopped
cucumber, thinly sliced
chopped garlic, fried
minced ginger
white onion 
oil
1/4 cup sugar
1/8 cup vinegar
1/2 tsp salt
red chili pepper or chili powder or pepper flakes
25g black beans, soaked in water(45 minutes before cooking)
soy
oyster sauce
ground pepper
2 tbsp cornstarch dissolved in water

Instructions:
Black bean Sauce
Fry garlic and red chili pepper in 3/4 cup oil.
Strain garlic and chili.
Set aside oil.
Add black bean in a processor.
Add the fried garlic, chili, sliced ginger.
Grind it until crumbly.
Add the sugar, vinegar, salt together with the oil that is used to fry garlic.
Process it until it becomes a paste.
Black bean Noodle
In a skillet, fry chicken until light golden brown.
Set Aside.
In the same pan, add a small amount of oil.
Fry garlic and white onion.
Add black bean paste.
Boil in medium fire.
Pour in cornstarch mix.
Add oyster sauce and soy for a deep black effect.
Cook in low fire until the sauce thickens.
Set Aside.
In another pan, saute onion and vegetables.
Stir in black bean sauce.
Toss in pasta.
Mix well.
Season with pepper and salt.
Serve.




DUBU GANJANG JORIM

Ingredients:
Tofu
Sliced
Cut measurement: width x height - 2x2 inches
Fry until light golden brown using vegetable oil 
Sauce
In a small sauce pan, just add the following ingredients:
sesame oil
garlic
soy
maple syrup
Heat in low fire until thicken
Sprinkle sesame seeds
