I finally completed my tin cakes this Christmas season. First is the Tripple Layer Chocolate Truffle Mousse-Pudding Cake: Chocolate sponge cake bottom, creamy dark chocolate pudding and milk chocolate and white choco mousse layers with grated white chocolate topping. Next is the Black Forest: 2 layered moist cake with real cherry creamy filling. The third is regular Chocolate Moist Cake with creamy chocolate filling. Fourth is the Special Carrot Cake with real macadamia nuts and lemon curd filling. It's also available in Classic Carrot Cake, just carrot batter with secret spices and lemon curd filling. Finally, the White Choco - Yema Cake: Fluffy chiffon moist cake with mascarpone filling, topped with yema frosting with white chocolate.

I just love this dish it's just that I don't have time to cook in my younger years (laughs) until one time...unknowingly that this recipe was available when we decided to try a buffet style in Ponderosa Restaurant located at Al Hilal, Doha, Qatar. Tried again after a few years back since I'm back home for good 😂 (got so much time to sink in cooking 😋)
Can't forget this recipe, tasted first through my first close friend during college days😊😍...It's my very first chicken curry triaI and it turned out great! My kids love it! We celebrated my son's 18th birthday last Tuesday...so I had to make a simple snack but I guess it can be also an early dinner. It's hard to admit that as a parent, sometimes missed our child's special event or any important matter but somehow we try to catch up to make things memorable to them even in a simple way of showing how much we love them so that our child/children see that we set our mistakes to be right for them. She's typically a taco-nacho junkie so I make her these before she got home to congratulate her with her outstanding performance in the school and as a reminder that we are aware of everything she does and so as to her siblings.

My brother was suddenly asking for a w-h-i-t-e crispy noodles and had his best effort to contact me via chat requesting to make some. Hmmm...well,not to my surprise, that's what also a dad feels like when his lovely wife is having a morning sickness. It's funny though yet it's a cute moment for a parent whose expecting. We are so excited to welcome our future new family member. Distance is not a big deal to hinder a wonderful family relationship. Everybody avoids artificial food color into their food that's why we prefer organic, an example is matcha, it's popular for making green colored drinks and desserts but if I want other substitute, I go for avocado, a healthy and all natural food coloring. My recipe for today is avocado marbled cupcake. A greenie batter, filled with dark chocolate ganache giving a bitter-sweet taste and to top of it, its done by marbling, an art technique to make cupcakes lusciously looking dessert.

My final first batch of recipes on my SUSHI FEAST PLATTER... Crispy Dinakdakan Crunch Roll. Typically, dinakdakan is a grilled pork belly with ear, tongue and liver like that serves as a starter in our province of Ilocos. But in this recipe, I fried the liempo or pork belly without the other organs but with the same cooking techniques and ingredients. I made it according to my children's liking. So here I go again, sharing another type of sushi which is a crunch roll: a flour coated-fried seaweed that results in a crunchy texture.

For what I know, the filipino term "Pancit" is simply called noodles. I think it's the top most pinoy's food of choice for rice substitute. I would say, it's a part of our daily lives. If you are a tourist, you don't need to worry if you feel starve because it's locally available. It's really a budget money saver. Besides being very affordable, you'll get instantly busog (satiated). It has many variants to choose from. One type of pancit is the one that I had learned from my mother in my younger days.... Usually, we, nanays are the in-home-chef. But surprisingly, our children also want to act like a pro in the kitchen sometimes (it's summertime anyway~giggles~). So, I sit back, chillin' for a while as my daughter Lia shows off her skills in baking her recipe which was featured in my "Mango Rama Dessert Favorites: #2.Mango Graham Icebox Cake".
This yummy ice cream I made is my way to bond with the kids since they are still on summer vacation. It's very simple to make. I'd like to share some of my toplist in best coffee shop in Doha, Qatar ( toured around the city a few years ago). To those who are coffeephile like me, I knew several places there to unwind during your stay. Coffee really is like an important part of me, as a mom; especially when busting out a load of chores plus my batutings (my endearment for my children)... uhm, you know what I mean (laughs). This idea can't make me wait making myself barista at home. As saying goes, "Coffee with loved ones is like capturing happiness in a cup".

Here's my additional sushi recipe...Chicken Inasal Caterpillar Roll!!! Inasal word is originated in Bacolod City (PH), a term in cooking which is composed of meat, marinated in a mixture of soy sauce and other flavorings then chargrilled. In this recipe, the ingredients were just fried instead of grilling it. In the other hand, caterpillar roll is the same thing with dragon roll - a thinly sliced avocado placed on top of a sushi roll thus, look-like a caterpillar.

Sisig is from a kapampangan word. It's a meat (a pork,more of an ear pig, liver and fat; it can be a chicken or a fish) cooked and dressed with a calamansi to make a soury taste...its like a salad. I know I should have made this as a home cooked meal but for the meantime let's make it into a bite-size "uramaki dragon roll". Uramaki means a rice rolled outward the nori and the nori encloses the fillings while a dragon roll is a type of sushi that usually an uramaki sushi roll and has an avocado on top of it.

Here's one of my sushi recipe collection I made for dinner. It's almost 2 decades ago when I first tasted this recipe-like in a newly built Japanese restaurant before (Karate Kid) at SM Sta. Mesa. I think they were closed there nowadays but you can still find them in some other mall areas, just google it :-) It was a hot summer so I thought of making this one, such a flashback and a nice mood for a biteful meal, like indulging in with my favorite cool drink.
I am feeling stressed preparing food just because it's summer, I know it's odd saying this but the weather is really intense, reaching up to 36 degrees Celsius that I barely stand cooking in our backyard kitchen for a long period of time. So I decided to grab some quick and easy recipe, but a handy meal. The first thing came up to my mind is sushi roll! So, let's have a sushi feast for lunch and dinner. All SUSHI...SUSHI...SUSHI!!!

1 lemon extract
15 ml vodka-like
500 ml blue electrolyte drink
500 ml Sprite
Just mix ingredients in a liter bottle. Serve with ice.

This cocktail drink will surely refresh your day. Great for party with friends or with your family gathering, just turn this drink into mocktail (just lemonade,no alcohol) and replace honey instead of sugar if you want your kids to have it.
1 whole lemon extract
5 mint leaves
1/2 size cucumber
15 ml soju ( or vodka of your choice if not available)
1/2 cup sugar
500 ml sprite
500 ml water
Just put all the ingredients in a blender. Put ice. Serve.
